Previously known as Pontini, Singapore’s well-loved Italian restaurant at the Grand Copthorne Waterfront Hotel has undergone a transformation and is now operating as Grissini.

Grissini is a contemporary Italian grill restaurant specialising in premium meats and seafood prepared in a unique oven which combines a grill and oven in one, along with pastas, pizzas and classic favourites with a twist.

The restaurant’s unique oven is fired by charcoal and flavoured wood to bring out the aroma and texture of the ingredients. Food items such as wagyu ribeye, lamb rack, pork collar, octopus, cod and seabass are grilled whilst keeping moisture in, creating optimal outstanding flavours.

Embark on a gastronomic journey with an impressive charcuterie platter, signature white pizza, homemade pastas and an extensive selection of wines that you can pair with your meal. Indulge your senses as you revel the sight of chefs preparing the dishes at the open kitchen.

A spectacular finale to the meal would be house speciality Chef Antonio Mama’s tiramisu that is superbly executed with layers of savoiardi, mascarpone and zabaione cream enhanced with lovely citrus notes or the warm hazelnut chocolate tart served with a scoop of pistachio ice cream.

Flambéed Spring Chicken - $43++

Farm-fed baby spring chicken stuffed with baby spinach, pinenuts, olives, grissini breadsticks, scamorza cheese, potato novelle, baby carrots and salsa verde sauce

Cioccolatissimo - $14++

Chocolate cake filled with raspberry mousse, chilli and served with a scoop of vanilla ice cream and forest fruits

Mozzarella - $27++

Buffalo milky mozzarella served with Parma ham, baby rocket, enhanced with Sicilian extra virgin olive oil “Primo” D.O.P and shaved parmesan

Swordfish - $24++

Carpaccio of Sardinian smoked swordfish served with baby datterini tomatoes, yellow frisée, taggiasche olives, micro cress, white balsamic dressing and basil oil

Salmon - $24++

Norwegian smoked salmon served with southern burratina cheese, pink peppercorns, baby rocket, micro cress and balsamic cream

Porcini Mushroom Soup - $14++

Porcini mushroom soup served with crostino and truffle oil

Charcoal Tortelli - $35++

Handmade charcoal tortelli stuffed with Alaskan king crab, frascati white wine, datterini tomato sauce, dressed with Sicilian extra virgin olive oil “Primo” D.O.P. and basil oil

Linguine - $40++

Capellini with fresh Boston lobster cooked with datterini tomatoes, frascati white wine, topped with Sicilian extra virgin olive oil “Primo” D.O.P. and fresh parsley

Spaghetti - $28++

Spaghetti served with Mediterranean veraci clams prepared with aglio-olio, parsley, frascati white wine and topped with Sicilian extra virgin olive oil “Primo” D.O.P.

Cod - $44++

Roasted Atlantic cod fillet served with mashed potatoes, sautéed baby spinach, white asparagus and saffron sauce

Hazelnut Chocolate Tart - $13++

Melted warm hazelnut chocolate tart served with a scoop of pistachio ice cream

Zuccotto - $13

Coated with Oreo cookies and served with caramel sauce

Veal Cheek - $39++

Slow braised Australian veal cheek served with mashed potatoes, organic carrots and baby rocket

Josper Oven-grilled Octopus - $40++

Wild-caught Mediterranean octopus tentacle served with green peas mousseline, smoked bacon, datterini tomatoes, roasted ratte potatoes and basil oil

Ribeye (250g) - $80

Tajima Wagyu marble 8 served with roasted ratte potatoes, baby rocket, shaved pecorino cheese, cherry wine tomatoes and mushroom cream sauce

Profile of Grissini Chef

ANTONIO COCOZZA

Genuine, fresh and natural. These are the three words that best define Italian Chef, Antonio Cocozza’s cuisine.

Chef Antonio who helms Grissini, hails from Naples, located on the Southern coast of Italy, where pizza was created. The affable and down-to-earth chef who graduated from Ippolito Cavalcanti has over 25 years of culinary experience and has honed his skills in renowned restaurants in the UK, Italy, Australia, Russia, Africa, China and Singapore.

Chef Antonio’s cooking style is innovative, yet genuine. He believes in marrying fresh and premium ingredients with natural herbs to create authentic Italian flavours with a difference. He infuses passion, dedication and finesse in his craft, whipping up delectable creations from his hometown. Many of his recipes are inspired by his mum who thought him the basics of cooking at a young age. His interest in cooking grew when he was a teenager and he decided to pursue a career as a chef. His passion led him to start a restaurant in Singapore a few years ago.

Over the years, Chef Antonio has experimented with many different cooking styles and has created a signature style of his own. He has curated a menu at Grissini which focuses on authentic pastas, pizzas, premium meats and seafood along with a twist on classic favourites.

Chef Antonio has an amicable and spontaneous personality which is reflected in his cuisine. He believes that fresh produce is the main essence of good food. “Originality is also important. A good chef can marry different ingredients and herbs to create various textures and flavours, however, there is no need to transform the dish too much.” he added.
